Delicious Meatless Meals to Make this Week

As more households move towards a whole or partial plant-based diet, it’s important for moms to keep their options open when it comes to healthy meat substitutes. Luckily, Lightlife has a large variety of options to choose from, including tempeh, plant-based meat crumbles, burgers, sausages, and deli meat. Our Moms Meet Influencers recently put Lightlife’s meatless options to the test and they may just be the gateway meals to your family’s upgraded plant-based diet. 

Incorporate more meatless meals with delicious ideas for every day of the week that are sure to give you cooking inspiration.

Meatless Monday

For a quick, easy and delicious meal, pair veggie fried rice with any Lightlife tempeh. @CraftyCookingMama likes hers sauteed in olive oil until golden brown with soy sauce, ginger, and a few minced garlic cloves. She thinks tempeh is the “perfect plant protein for mealtime!”

Taco Tuesday 

Taco night is always a big hit and what better way to enjoy plant-based proteins than with fresh mango salsa on top. @MyBigFatHappyLife created this craving-worthy taco plate using lime juice and olive oil marinated Lightlife Organic Original Tempeh and mango salsa. Once the tempeh has marinated for a while, grill it up and assemble terrific plant-based tacos. 

One-Pot Wednesday

Weeknights can be hectic and easy one-pot meals can really come to the rescue in both cutting back on time and cutting back on dishes. This perfect one-pot tempeh hash from @MoniqueCreus_fit is made with potatoes, onions, bell peppers, kale, and topped with nutritional yeast. Simple and tasty! 

Tempeh Thursday 

Top oodles of noodles with delicious tempeh, sautéed in olive oil and soy sauce for extra flavor. This steamy udon noodle bowl from @JohannyCasillas is just asking for someone to dive in and enjoy.

Stir-Fry Friday 

Fry-day recipe inspiration time! Marinated in peanut and soy sauce, @Smiling_Notes stir-fried her tempeh with fresh veggies and served it over rice. Mom Pro Tip: cut tempeh into different shapes to make meatless meal times more fun!

Team Snack Saturday 

Nothing says summertime like a delicious veggie dog decked to the nines in garden goodies. These over-the-top veggie dogs from @SiriLorece are loaded with basil butter caramelized onions, chopped collards, cabbage and kale, a pickle spear, mustard, cheddar, and one with chipotle aioli, the other with ketchup. Talk about loaded with goodness! 

Super Salad Sunday

Greens are a great way to get all things veggie, but even better when topped with Lightlife Tempeh. @Teenyvegankitchen cooked hers with a couple of splashes of liquid aminos, garlic, onion, and cayenne and says it’s now one of her new favorite salad toppers.
