Ingredients
- 1.5 cup yellow lentils, cooked⠀
- 2 Tbsp coconut oil⠀
- 2 garlic cloves, finely chopped⠀
- 2 Tbsp fresh grated ginger⠀
- 1 Tbsp turmeric⠀
- 1.5 Tbsp curry powder⠀
- 1 can (14oz) full fat coconut milk⠀
- 1 tsp cayenne pepper⠀
- 3 cups vegetable broth⠀
- 1 tsp salt⠀
- 2 cups jasmine rice, cooked⠀
- Kibo Mediterranean Herbs chickpea chips⠀
- Cilantro (optional)⠀
Directions
- Add coconut oil to a large pan over medium heat.⠀
- Add chopped garlic and ginger. Cook for 2 minutes.⠀
- Add lentils, curry powder, turmeric, cayenne, coconut milk and lower to simmer. ⠀
- Let simmer for 10-15 minutes.⠀
- Remove from heat, top with cilantro, and serve over rice and Kibo chips.
