Malibu Mylk’s Banana Muffins

Ingredients

  • ⅓ cup melted coconut oil or extra-virgin olive oil ⁠
  • ½ cup maple syrup ⁠
  • 2 eggs ⁠
  • 2 ripe bananas
  • ¼ cup Malibu Mylk
  • 1 teaspoon baking soda ⁠
  • 1 teaspoon vanilla extract⁠
  • ½ teaspoon salt⁠
  • ½ teaspoon ground cinnamon⁠
  • 2 cups oat flour⁠
  • ½ cup oats⁠
  • ½ cup chopped walnuts ⁠ ⁠

Directions

  1. Preheat oven to 325º F and grease a muffin pan.⁠
  2. In a large bowl (or blender), beat the oil and honey together with a whisk. ⁠
  3. Add the eggs and beat well, then whisk in the mashed bananas and milk. ⁠
  4. Add the baking soda, vanilla, salt, and cinnamon, and whisk to blend.
  5. ⁠Stir in the flour⁠.
  6. Pour the batter into your greased loaf pan⁠.
  7. Sprinkle lightly with cinnamon. ⁠
  8. Bake for 25-30 minutes⁠.
