Royal Icing

  • 2 egg whites
  • 1 lb. confectioners’ sugar
  • 1/2 tsp. vanilla extract
  • 1 packet Color Garden natural color


  1. Separate egg whites and add them to the bowl of an electric mixer.
  2. Using the paddle attachment beat egg whites until they begin to froth.
  3. Gradually add sugar a little bit at a time until all the sugar is incorporated and the icing thickens.
  4. Stop mixer and scrape down sides with a spatula and mix again.
  5. Add in vanilla extract and color. Mix until color is well incorporated.
  6. Stop mixer, and mix with spatula to ensure even disbursement of color.
Notes: When using colors YELLOW, PURPLE, PINK, and LIGHT GREEN add in 1 tsp. lemon juice at end to deliver proper color. When using RED color, make icing 1 hour ahead of time to achieve proper color.
