Tex-Mex Empanada Nachos

  • 1 bag of Brazi Bites Chicken & Cheese Empanadas for your base
  • 12 ounces of shredded Longhorn Cheddar Cheese (or any brand if Longhorn not available)
  • 1 can of refried beans
  • 1 can (about 20) pickled jalapeños
  • One tomato, diced (optional)
  • Guacamole and salsa for serving


  1. Bake or air fry empanadas according to the package.
  2. Let cool for 10 minutes.
  3. Arrange baked empanadas close together on a sheet lined with parchment paper.
  4. Use a spatula to spread refried beans on top of each empanada.
  5. Sprinkle cheddar cheese on top of empanadas and refried beans.
  6. Place one pickled jalapeño on each empanada (or more depending on your spice preference).
  7. Bake at 375°F for an additional 5-7 minutes or until melty and warm. *Optional: put under broiler on low for 3-5 minutes for a crispier top layer.
