Ingredients
- 1 bag of Brazi Bites Chicken & Cheese Empanadas for your base
- 12 ounces of shredded Longhorn Cheddar Cheese (or any brand if Longhorn not available)
- 1 can of refried beans
- 1 can (about 20) pickled jalapeños
- One tomato, diced (optional)
- Guacamole and salsa for serving
Directions
- Bake or air fry empanadas according to the package.
- Let cool for 10 minutes.
- Arrange baked empanadas close together on a sheet lined with parchment paper.
- Use a spatula to spread refried beans on top of each empanada.
- Sprinkle cheddar cheese on top of empanadas and refried beans.
- Place one pickled jalapeño on each empanada (or more depending on your spice preference).
- Bake at 375°F for an additional 5-7 minutes or until melty and warm. *Optional: put under broiler on low for 3-5 minutes for a crispier top layer.
