      Why not try one from Bob’s Red Mill?

      Classic Chocolate Chip Cookies

      2-1/4 cups Bob’s Red Mill 1-to-1 Gluten Free Baking Flour
      1 tsp Baking Soda
      1 tsp Salt
      1 cup (2 sticks) Butter, softened
      3/4 cup Sugar
      3/4 cup packed Brown Sugar
      1 tsp Vanilla Extract
      2 large Eggs
      2 cups Chocolate Chips
      1 cup chopped Walnuts (optional)
      Preheat oven to 375° F.

      Mix flour, baking soda and salt in small bowl. Set aside.

      Beat butter, sugar, brown sugar and vanilla extract in large bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture and beat until well-blended. Stir in chocolate chips and nuts.

      Roll dough into balls, about two tablespoons each. Place 2 inches apart on ungreased baking sheets.

      Bake for 11 to 13 minutes or until golden brown. Cool on baking sheets for 5 minutes. Move to wire rack to cool completely. Makes 36 cookies.

      Ingredients:
      ½ cup all-purpose gluten-free flour (see NOTE)
      ½ cup granulated sugar
      ¼ teaspoon cinnamon
      ¼ teaspoon baking powder
      ½ cup old-fashioned gluten-free rolled oats (e.g., Bob’s Red Mill, GF Harvest)
      1/3 cup Honey Melt®, soft
      2 tablespoons heavy cream
      4 teaspoons honey
      1 teaspoon vanilla extract
      2 ounces dark chocolate, melted

      NOTE: Gluten-free flour mix is 4 cups superfine brown rice flour, 1 1/3 cups potato starch (NOT flour), 2/3 cup tapioca starch. Combine all ingredients in a large ziplock bag; shake until well blended. Store in refrigerator or freezer.

      Directions:
      1. Preheat oven to 375 degrees F. Line two baking sheets with parchment paper.
      2. In a medium bowl, combine flour, sugar, cinnamon, baking powder, salt, and oats. Set aside.
      3. In mixing bowl blend Honey Melt, cream, honey and vanilla. Beat until smooth.
      4. Add in the dry ingredients slowly and in stages. Mix to combine.
      5. Drop about 1 measured teaspoon of batter onto prepared baking sheet, trying to make the cookies all the same size. Place only 12 cookies on each sheet because the cookies will spread in the oven.
      6. Bake for 6-8 minutes. Remove from oven and let cookies cool on baking sheets for 2 minutes. Carefully transfer cookies to a wire rack and cool completely.
      7. For sandwiched cookies: Use spatula to spread one cookie with melted chocolate. Place second cookie on top. Repeat with remaining cookies.

      I have use Bob’s Red Mill before and it turned out well but another recipe I use all the time is for peanut butter cookies.

      1 cup peanut butter
      1 egg
      1 cup sugar

      350 degrees for 8 minutes, however I usually put them in for 7, or make bigger cookies so they are gooey. I can’t remember where I found this recipe but they are delicious and super easy to make

      Got one for you, it’s a frankenstein of five recipes:

      Snickerdoodles

      1 cup almond flour
      2 tsp coconut flour
      1 tsp baking powder
      1/2 tsp salt
      2 tbsp olive oil
      2 eggs (or 2 flax/chia eggs if vegan)
      1/3 cup powdered sugar
      1/2 tsp cinnamon
      1/4 tsp nutmeg
      1 tsp vanilla extract
      1/2 tsp maple extract (or pancake syrup/maple syrup/molasses)

      Topping
      2 tbsp cinnamon
      2 tbsp granulated sugar
      1/4 tsp salt
      (optional) 1/4 tsp black pepper

      Combine all in mixer, adding eggs one by one. Preheat oven to 350. Put dough in fridge for 20 minutes or until firm. Roll dough in small balls and coat with cinnamon sugar topping and place on cookie sheet. Cook 15 minutes. Hope you like.

      Easy and Simple.

      3 Ingredient GF Cookies

      1 lg. egg
      1C. sugar
      1C. peanut butter

      Cream together egg and sugar. Add peanut butter and mix together. Drop by tablespoon onto a greased baking sheet and bake at 350*F for 13-15 minutes.
