- 10 oz edamame (shelled)
- 2 handfuls baby spinach
- 1 tbsp tahini
- ½ lemon (juiced)
- 1 clove garlic
- 1 pinch cumin
- Salt (to taste)
1. Boil the shelled edamame for 5 mins.
2. Add the remaining ingredients to your food processor and pulse until the mixture starts to break down.
3. Drain the cooked edamame and add it to the food processor; blend with the other ingredients. Add water a few tbsp at a time and blend. Add more water until the desired consistency is achieved.
4. Refrigerate until ready to serve.
