Kibo’s Lentil Curry with Chickpea Chips

Ingredients

  • 1.5 cup yellow lentils, cooked⁠⠀
  • 2 Tbsp coconut oil⁠⠀
  • 2 garlic cloves, finely chopped⁠⠀
  • 2 Tbsp fresh grated ginger⁠⠀
  • 1 Tbsp turmeric⁠⠀
  • 1.5 Tbsp curry powder⁠⠀
  • 1 can (14oz) full fat coconut milk⁠⠀
  • 1 tsp cayenne pepper⁠⠀
  • 3 cups vegetable broth⁠⠀
  • 1 tsp salt⁠⠀
  • 2 cups jasmine rice, cooked⁠⠀
  • Kibo Mediterranean Herbs chickpea chips⁠⠀
  • Cilantro (optional)⁠⠀

Directions

  1. Add coconut oil to a large pan over medium heat.⁠⠀
  2. Add chopped garlic and ginger. Cook for 2 minutes⁠.⁠⠀
  3. Add lentils, curry powder, turmeric, cayenne, coconut milk and lower to simmer. ⁠⠀
  4. Let simmer for 10-15 minutes⁠.⁠⠀
  5. Remove from heat, top with cilantro, and serve over rice and Kibo chips.⁠
